Corn Fritters

Great as a snack, appetizer or a side dish
Makes 24 Pieces

1 cup corneal
3 cups corn kernels
1 cup sliced scallions
1 jalapeno, diced fine
½ teaspoon cumin, ground
2 teaspoons salt & pepper mix
1-tablespoon sugar
1 ½ cups sour cream
3 tablespoons light olive oil
2 egg yolks
6 egg whites

Mix corn meal, corn kernels, scallion, jalapeno, salt & pepper
Add sour cream, olive oil & egg yolks. Mix well and let sigt 5 minutes
Beat egg whites to stiff peaks.
Fold egg whites into corn mixture
Spoon ¼ cup batter onto hot griddle or oiled skillet.
Turn fritters when bubbles appear on top.
